③ 温度は重要です。約90～95℃のお湯を少量（20mlほど）注ぎ、約20秒蒸らした後、2～3回に分けてお湯を注いでください。（合計約200ml）

このコーヒー豆は、通常は高品質ウォッシュドの豆に使用される完熟チェリーをナチュラルに使用しています。標高が高い上に、赤道直下のこの地域では、日照が強すぎると豆にダメージを与えてしまいます。
そこで、それを防ぐために日照の強い11～15時の時間帯は、チェリーをビニールシートで覆い急激な乾燥を防いでいます。また、通常の乾燥日数が10日間のところ、20日間掛けてゆっくり乾燥を進めるスロードライングをすることで、コーヒー内の水分を均一化させ、複雑でありながらクリーンな味わいを作り出しています。
